My Atkins Birthday
Yesterday was my birthday and I didn't want to cheat so my 14 yr old son made me an Atkins Chocolate Chip Muffin birthday cake. We made some icing out of cream cheese, splenda and atkins cherry syrup.
I must say it was disgusting lol but I ate everybit (he made 6 minicakes)
Luckily I bought them a (real) mini cake at Publix. When they tasted mine my older son said it tasted like dogfood. I thought about it and he's probably right (although I won't ask how he knows what dog food tastes like). Atkins mix is mostly soyflour and the cheap dog food I buy is soy protein so I just growled at him and kept eating-hey it had choc chips that was enough for me.
We also made ice cream sundaes, I had the choc Atkins (not bad no funky taste but the texture was a little odd) with Cherry Syrup and chocolate whipped cream- yum that was good
For dinner we had shrimp fajitas (with La Tortilla tortillas, they are excellent!)
All in all it was great although even though everything was Atkin's Friendly it still came to over 35 carbs, I can only imagine what it would have been with non-atkins foods
But the highlight was my homemade birthday card my son made on the computer, he found a picture of Dr Atkins and made a card with his picture on it saying keep it up and happy birthday. Really cute and creative (he also made me one with Fab5 Queer Eye guys but thats a post for another board!)
oh the other 5 Atkins mini cakes went in the trash!
