Replicating Puka Dogs LC style - making oopsies for buns, making my own garlic lemon sauce and the only slightly carby thing will be the pineapple in the pineapple salsa (making that too)... using brats this time - making my own "sweet" mustard by just adding some sweetener to a spicy mustard. I had these in Kauai when I was there years ago - had to make them at home.

Went out to celebrate- after nearly 2 years of fertility treatment, I'm pregnant!!!!!!!

Steamed clams
Garden salad with sherry vinaigrette
Iced tea

Snacking on sf cocoa and almonds now

Btw, missed this place. I just couldn't stand seeing my old posts asking about low carb pregnancies . So I stayed away. So glad to see so many familiar people are still here.

DH has become a crackslaw fan, beef with garlic and ginger. I just got him some lowcarb wraps so he can make it into Mu Shu Pork.

If I can do him a General Tso's low carb, I think he will swear off takeout happily.

I just saw what I thought was a low carb General Tso Chicken Recipe...I had the book out from the library.... I think it was Patricia Heaton's Food for Family and Friends, but I could be wrong. I bet there is one floating around out there!
(ok I googled it - lots of keto and lc recipes to be found!)

Tonight is my go-to shrimp salad w/romaine, hard cooked egg, shredded mozz and Ranch dressing...tomatos, avo, those Parm cheese crisps... bacon bits...yum.

Thanks, mviesprite! I figured once I looked around I'd see some tricks and tips on getting that flavor.

I have told him about cauli-rice, but I don't think he was enthused... yet.

I used to frequent a pub that literally had that on the menu. It was lettuce + boiled eggs + every vegetable + every meat in the whole dang kitchen. It was a great LC meal. I don't think I ever finished it.

Thanks Werebear and Kristine!

And that salad sounds awesome- out of curiosity I googled "kitchen sink salad" and a million recipes popped up, which defeats the purpose of using leftovers ?

Tonight: Had to use 2 big avocados that I forgot here when I went to petsit... they were still good but weren't going to last long, and had leftover chicken breasts so made Stuffed Chicken and Cheese baked Avocados in the toaster oven. They were good!
