Default anyone have a recipe for rhubarb and is sweet?

i saw on atkins that rhubarb is allowed in induction! i was so thrilled! I love fruit and it is killing me not to have it during induction. as soon as I saw rhubarb on the list i thought back to the tremendously scrumptions strawberry rhubarb pies my southern grandmother used to make...and the rhubarb jam on english muffins!
fantasies aside....i spotted some rhubarb in the grocery store and now am wondering, what the heck am I going to do with this? how do i transform this to an atkins/induction friendly sweet treat!

suggestions?

Default Rhubarb is coming up, any sweet recipes out there?

I love rhubarb, and I would love to find some recipes using it. Does anyone have any suggestions? Something say with Strawberries and rhubarb? Thats one of my favorite combos!

Hey, Shama, now you are KILLING me. My dear Mom used to make the best rhubarb strawberry pie, hot from the oven, with french vanilla ice cream on top!!I could never duplicate her flakey pastry.

I think the only thing you can do is stew the rhubarb and strawberries in the normal way but add spenda when cooked.
maybe serve on a bit of Lc cake (which I have never made) or eat alone in a bowl.

Please let me know if you come up with something. (Have you ever made old-fashioned rhubard crisp??) Can't make that, very high carb, lots of oats and brown sugar etc.

Hi HL,

Boy, you were lucky, to have a mom to bake them for you. My mom didnt do much baking, we had pies on the holidays only. I discovered the recipe when I needed to use up rhubarb and strawberries. We have both in our garden. That is my favorite pie. To bad we cant make it LC. Ive also made rhubarb bread with a sweet crumb topping, now that is to DIE for!!!!!!!!!!

I'll just have to experiment. I hope I figure out something that is tasty!

Thanks, Shannon.. I have a little bit of rhubarb stewing on the stove right now.. just got 3 stalks of it this time. I ditto the interest in rhubarb desserts.. used to love rhubarb-strawberry pie!!

Talking hummm

Hi guys, I guess you have inspired me. On Sunday I have guests for dinner. It'll be filet mignon wrapped in bacon, done on BBQ, with lots of grilled veggies, asparagus etc.

And desert, Karen's cheesecake with nut crust, with a luscious topping of strawberry-rhubarb compote!

A lovely pot of expresso to go with it. I usually use blueberries but I bet this will be great. Thanks for the ideas. See ya soon,

Default attempting rhubarb pie? tonight

inspired by the rhubarb and the recipes I go into my "test kitchen". I'll let you know what I come up with!

Rhubarb Creme no Brulee or Custard: Toss the rhubarb (small pieces, raw) with AS and sprinkle it in a single layer in the bottom of the dish. Cover with the custard filling and bake according to the recipe directions. If you do this in a nut crust, you've got rhubarb custard pie.

Rhubarb Strawberry Fool: Mash up strawberries with cooked, sweetened rhubarb. Fold into whipped cream and chill.

Cheesecake: Cook rhubarb and AS in a tightly covered pan with 2 Tbsp. of water at 350F until tender. Cool and fold into a cheesecake batter. Bake as instructed in the recipe and top with strawberries.

Rhubarb Jell-o: Stir cooked rhubarb into strawberry Jell-o before setting.

Rhubarb Tofu Almond Pudding: Puree a package of silken tofu with almond butter and AS to taste. Stir in cooked, sweetened rhubarb and chill.

Hi Karen,

Thanks for all the recipes, WOW!!!

They sound so good, cuz I LOVE rhubarb, so much so that when I was just a little kid, my neighborhood friends and I would go to some of the neighborhood gardens and get some and dip them in sugar and just eat it raw!!

Pretty bad ha!

Now I really feel like an idiot, but I'll ask anyway. What does AS stand for. I'm not good with abbreviations. Please bear with me.

Thanks again, I will try them all, probably will start this weekend!
