Default Fast and Easy Tuna 'Casserole' (one serving)

I ate this almost everyday on Induction! (and still eat it occasionally on OWL because its just so damn satisfying)

ingredients
1 can tuna in water
2 tbs mayo
1 cups steamed broccoli (you can have more if you need to add more carbs to the end of the day)
1 ounce shredded cheddar (or whatever shredded cheese you prefer)
optional: garlic and onion powder

Directions
Drain can of tuna and plop into the bowl you will be eating out of (I like putting this into a fairly large individual Asian soup bowl). Mix in 2 tbs mayo, onion and garlic powder (if you want, it makes it taste AMAZING however). MIX WELL. Put steamed broccoli on top of tuna, preferably piping hot off the stove. Make sure it is drained well, because excess water will make the tuna runny! Then immediately put the shredded cheese on top, which should melt it a little. If needed, nuke the whole thing for 30 seconds to melt the cheese.

As always I am one ingredient short tonight it was broccoli I did have some cauliflower and used it instead. Was rather tasty and filling. I can't wait to try it with broccoli

I have a really weird, totally irrational fear about heating mayo

I think it's a childhood fear about tomaine (sorry don't know how it's spelled) poisoning. I'm really dating myself here.

I'm really paranoid about it. I guess it's okay though. I see it in recipes all the time. Like I said, totally irrational.
