Default Peanut Butter Spice Ice cream - 4carbs

This is easy, totally yummy, rich and works out 3.9 carbs per serving with my ingredients:

30ml Heavy cream/double cream - 0.5 c
2 tsp Butter (unsalted) - 0 c
2 tsp Peanut butter (sugar-free, chunky) - 1.5 c
1 tsp Sweetener - 0.3
0.5 tsp cinnamon - 0.9
0.5 tsp all spice - 0.7

Melt the peanut butter and butter in the microwave and stir into the cream, along with the sweetener and spices. Put in freezer for an hour. Done!

It even comes out with the texture of ice-cream!!

I'm going to try variations with almond butter and different spices next!


Custom carb counts: Morrisons double cream - 0.5 / Butter - 0 / Whole Earth Peanut butter (sugar-free, crunchy) - 1.5 / Hermasetas - 0.3 / Cinnamon - 0.9/ All spice - 0.7

It is yummy! I guesstimated the amount of cream - actually I think it was about 60ml. I guess it doesn't matter that much as we all adjust the ingredients to taste. I'll try measuring the cream next time to check what I prefer.

The main thing is actually not to put too much liquid (ie cream) in - the peanut butter and butter should make up a fair proportion of the mix to hold it all together. When you mix up the 'batter' it should be scoopable, just dropping slowly off the spoon.

What I love about this recipe is that it takes about 2 minutes to prepare and then only an hour to freeze. And so low in carbs! And it's delish.

Let us know how you get on and what proportions worked for you. We've had some really hot weather the last few days so I can see variations of this becoming a staple
