"Mock" Zater Tots
I prepared this really cool recipe tonight I call Zater Tots. I go the idea from a recipe for Zucchini that was like patties and one that was like puffs from a book. I liked a lil of both and made up my own version. I loved em So did dh who doesn't like Zucchini.
1 cup grated zucchini
1/4 cup soy flour
1/4 cup crushed plain pork rinds
1 egg
pepper flakes to taste (opptional)
1 teaspoon baking powder
1/4 tsp garlic powder/ or fresh
1/4 tsp onion powder
salt and pepper to taste
mix it up well. heat a skillet with lard or oil, although I think lard worked nice.
I pan fried them and they came out great, but I'm sure deep frying would be awesome.
*Although tweaked, first inspiration came from a book called, Extreme Low-Carb Cuisine by Sharron Long and secondly from a very very old family cookbook*
