1- 2-punch chicken salad
1 can of chicken breast, drained
2 tbl mayonnaise
1 tbl dijon mustard
Dill or sweet relish, to taste (I use two chopped whole dill pickles)
1 tbl flax meal
1 tbl coconut oil, melted
Mix it all together; adjust ingredients as desired, to taste.
Voila! The same amount of fiber as 3/4 c of oatmeal and all the benefits of coconut oil. The coconut oil gives it a light, tropical taste, and one modification I often make is to throw in some curry powder for a Thai twist.
