Default Chili

2 lb ground beef
2 boneless, skinless chicken breasts
2 boneless pork chops
1 10 oz can of diced tomatoes with green chilies
1 16 oz can of tomato sauce
1 4.5 oz can of diced green chilies
2 T chili powder
1 T cumin
1 T onion powder
1 T garlic powder
2 t paprika
1/4 t cayenne pepper


Bake chicken and pork chops until cooked through. Chop into ½
inch dice. Brown ground beef and drain. Put beef, chicken, and
pork in a crockpot. Mix in the tomatoes, sauce, and green
chilies. Add the spices and mix well. Cook on low for 6-8
hours. Top with shredded cheddar cheese and sour cream, if
desired.

8 1 cup serving
25 total carbs so 1 cup = a little more than 3 carbs

Just wanted to give some input on this. This is basically the only chili recipe you'll ever need, and the best. I did it the first time to the letter, and it turned out gorgeously, and all the times since then, I've made it without keeping exactly to the measurements (I kinda just throw ingredients in there) and it still comes out beautifully. It NEVER lasts long. I prefer to use cut pieces of meat rather than ground meats now, and pork chops take to this chili fantastically. The last time I made it, I used about 8 thick cut pork chops in it instead of other meats, and ate virtually the whole pot over the ensuing days myself. I'm making it today with about 4 pounds of cut pieces of a chuck roast. I'm obligated to share it with my SO, since last time I ate all but one bowl.

When I serve this, I put grated cheddar on top, and a few jalapeno discs.

Have you ever tried making it without pre-cooking the meat?

That would make this easier and much less clean up.

Personally that's what I'd do chop everything into bite size hunks and throw in pot or crockpot and smimmer for hours to marry flavors. Sounds like a good recipe tho.......I had chili today, just ground beef pretty much same ingredients I use chicken broth or beef broth and simmer for hours I added one can of beans to a HUGE pot......normally I would have added 2-3 large cans, but keeping carbs down and it was every bit as good if not better than pre-lc days!

THANK YOU! Yes, that's a detail I forgot to add. I think it turns out better that way. And I go the full 8 hours in the crockpot. AND...it's better the second day.

And, since for some reason I can't fathom crock pot cooking without it, I add...a half stick of butter.
