These are GREAT! Just made them for DH and myself with LC meatloaf and gravy, and it was the best comfort food ever. Didn't have parmesan cheese, just a four-cheese mix, but it still was awesome. They tasted a little like cauliflower at first...but with the gravy (3 carbs per 1/4 cup...I only had a couple of tablespoons) they were indistinguishable from real mashed potatoes. I will say, however, that the recipe, which is supposed to serve 3 or 4, really only had 2 good sized servings (well, my normal sized serving and my DH's giant portion!) He's not low carbing, but refused the "real" mashed potatoes I had gotten for him.....loved the mock ones.
This recipe is truly a keeper. By the way, I steamed the cauliflower in the microwave, using directions from a different LC faux potato recipe. Cut the cauliflower in small pieces, put it in a covered dish with 1 Tablespoon water, and heat on high for 5 minutes. Stir, and heat another 5 minutes; let stand covered for an additional 5 minutes.
I used the food processor and just zapped it all together....delicious.
