I was wondering if anyone has come up with a solution to a low carb recipe for
1) Banana Cream Pie
2) Coconut Cream Pie

Here's a recipe for Coconut Cream Pudding . I suspect you could just put this in a nut crust and chill it or spread some whipped cream over the top!

The banana one sounds good though. I do have a vanilla pudding recipe that you could probably trade the vanilla extract in it for banana extract to make banana pudding and put that in a nut crust. Here is the Vanilla Pudding recipe.
