Last nite had veg beef stew with cauli-mash.

My stew has changed a lot from when I first made it with just potatoes and carrots Now it's onions, green beans, garlic, radishes, peppers, turnip and spinach. And finished with butter

I made some hot & spicy LC chili yesterday, adding some sliced polish sausage for my dinner. Had some for lunch today, too. It was very good stuff, but not exactly as LC as I'd like (7 or 8 grams per serving). It has just a little too much cooked down tomato to be very low carb. So it is not something I'll make very often -- at least not until I get down to a maintenance weight. I was just in the mood for a dish that would give me a kick in the butt -- and this one hit the spot.

Cauliflower fried rice with beef/broc/mushroom stir fry. Night before I made cauliflower pizza crust/pizza. My pesto/chicken/red onion/mozzarella pizza was a big hit. Probably going to skip using cauliflower tonight and search here for something yummy!!

Last night I made a stir-fry of diced chicken breast and 2 packages of frozen "Asian vegetable" mix. I heated the fry pan while I diced the chicken and thawed the veggies in the microwave. Seasoned with 3 tbsp. soy sauce, 1 tbsp. oyster sauce, and some oriental spice mix. Dinner was ready in under 20 minutes. Having leftovers for lunch today.

Last night I tried out my new Vegetti. Zuccini sauteed in butter with a sweet basil pesto sauce. Topped with fresh parmesan cheese. I was in Italian food heaven!

I was going to make cauli-pizza tonight, but ran out of motivation. So I have been snacking on some red bell peppers and lunch meat. Today is more like a snacky day than a meal day.

Why? Because I was unprepared. Didn't take anything out to thaw and now I'm really unmotivated since my DH brought home a big can of beef pot roast soup for his dinner. I'm off the hook!

Tomorrow--cauli pepperon pizza here I come!

I went to cheesecake factory last night- split a raw tuna appetizer with avocado and ginger with my boyfriend.
Ahi cappricio i think?

I had lettuce wraps with chicken and mushrooms- yum!

and i had my first ever long island iced tea- they make one in diet!

all 3 from stupidly named, but helpful to have- skinnylicious menu. most dishes on that menu aren't lowcarb, but some are or can easily be modified to be so!


Tonight- boyfriend's parents are coming into town to see our apartment/ city for first time- gulp!

Spinach and creamcheese stuffed garlic chicken breasts
green salad with roasted bell peppers and vinaigrette

Went out with boyfriend's parents last night, to great italian place-

tomato mozzarella salad
mixed calamari in EVOO and spices (appetizer)
stole a giant scallop from my beau
chardonnnay

yum!!!!! who says italian isn't perfect for low carb?
