Default Dolphin's Deviled Eggs (Atkins Induction Friendly)

I know there are some deviled egg suggestions out there already. This is my Italian spin on them, that I find takes them to a whole new level of awesomeness. hehe.

The nutrition stats for one serving (I've listed that as both halves of one egg) are written in my custom foods in my MyP.L.A.N., but I'll list them here too!

For both halves of one egg the nutrition is:

Calories: 98
Carbs: 1g
Fat: 8g
Protein: 7g

Ingredients:
6 eggs
1 tbsp Hellman's Real Mayonaise
1 anchovy fillet, stripped and mashed into a paste
1 tsp dijon mustard
smoked paprika (you can use regular too, but I do love smoked)
pimento (buy in a jar, in oil)

1. Hard boil your eggs, then run them under cold water. I often do this step long in advance of making them.

2. Slice eggs in half and place face up on a plate. Collect the yolks in a mixing bowl

3. Mix mayo, mustard, anchovy paste into the yolk with a fork or spoon until you have a fluffy mixture without too many lumps. You can adjust this to taste. Be careful of the anchovy, it can get overpowering. But when you find the balance it is heavenly.

4. Scoop the yolk mixture back into your little egg halves and top with a small sliver of pimento and a light dusting of paprika.

Served.
