Seven Layer Salad
Here is my new favorite for lunch.
This makes a 22 cup size bowl full.
1 1/2 bags of lettuce (I am on the go!)
6 hardboiled eggs
2 cups of chopped broccoli
1 1/2 cups mayonaise
paprika
salt/pepper
Splenda
2 cups or more shredded cheddar cheese
5 oz. real bacon bits (1/2 cup or more)
Layer the salad starting with 1 bag lettuce. Sprinkle a little Splenda and salt and pepper to taste. Next layer slices of the 6 hardboiled eggs. Top with all the broccoli. Top that with the remaining lettuce and press down. Mix the mayonaise with the paprika and a little Splenda and spread over top of the lettuce. Next, add the shredded cheddar and top with the bacon bits.
