Any substitute for the mushroom wine sauce? No wine available in my house. The rest of it sounds absolutely wonderful.

Indeed. Take some vegetable broth and pour it in the pan. Heat it up, and scrape the pan. As the liquid cooks down, you may want to squeeze some lemon in it. Just as good. Chicken and lemon go very well together. Omit the mushrooms, throw in some chopped parsley.

Thumbs up Great Recipe!

I tried this recipe today with Monterey Jack cheese and it was delicious! Then I made 3 more up with Swiss cheese for my lunches this week. I didn't put the egg bath on and fry them though. My roommate, who has done Atkins before, suggested an alternative that worked wonderfully. As an alternative to the egg bath and frying before baking, just coat the chicken in mayonnaise, then roll in the pork rind "breading" and bake for 40-45 minutes. The mayonnaise holds the breading in place really well and then turns into an oil in the oven so that it crisps up the breading. It turned out really well! Thanks for the great recipe! I'm already looking forward to making this again!
