Question

Good Morning All,

Wouldn't you know, no work today and here I am wide eyed and bushy tailed early in the morning!

I thought since the winds are so darn high this morning that our plans on travelling to an auction should be cancelled (I can't handle the thought of the gas disappearing from my tank... all for just an auction that I probably won't buy anything from!).

So Wendy decided on taking a duck out of the freezer that she bought on a whim last week. I have never cooked duck and thought it would be a nice change, although I have heard it can be a bit greasey?

Anyway my question on this is, does anyone know of a sauce I can make to go with it? Naturally I was so busy yesterday I didn't have a chance to do any food shopping and of course today all will be closed, so no wine in the house, this sauce will have to be real simple.

Any ideas? Thanks for any replies on this...really appreciate it.

what about orange, lemon, or lime. something to counteract the greasy taste? maybe balsamic vinegar?

do you have lemons on hand? you could stick them inside the duck. i've never cooked duck before but i've stuck citrus fruits inside chickens that i've roasted. check out some chicken recipes. you could adapt the recipe to duck.

Well Deb,

I am planning on a stuffing and thought maybe add garlic cloves on the inside and spread terikki sauce all over the duck?

Then add cream to the pan drippings???

Whatcha think...am I crazy? (hehehehe)

cream sounds great! just drain off the fat and just use the pan juices. i still like the idea of lemon. how'bout some grated lemon peel in the stuffing and in the cream?

LOL...no lemons in house..just lemon juice I'm afriad!

sure, use some to moisten your stuffing, may be add a table spoon to the pan juices when making the saue. mind you this is if you even like lemon juice. i happen to love lemons and would put lemon in almost everything, if i could! it just wakes up my mouth!

Default Cooking a Duck

Hi Wendy,

A few tips on cooking a duck....
  • Prick the skin with a fork, many many times. This will help the fat to run out

    Roast on a rack in the baking pan. Again this will keep the duck above the fat

    Salt it rather heavily inside and out

    Stuffing with garlic sounds good! Remove the cloves after roasting and mash them into the sauce you are making

    Bake at 350 F for 1 1/2 - 2 hours

    I would make a sauce with pan drippings, your teriyaki sauce and lemon juice. If you have any green onions, throw them in too

    Save the duck fat for cooking. A steak cooked in duck fat is heavenly!

Oh dear, I should have asked this also...just getting the duck ready. How much water do I put in the pan...I am assuming you do put water in it? Maybe like when one is doing a roast?

Thanks for your help Deb and Karen...I sure needed it. I am not a happy camper though and think that is my first and last experience with a duck. I was shocked at the amount of meat! Pickings and the darn thing cost me over ten dollars....thank god for my stuffing which has sausage meat. I am so disappointed putting all that time in and then to get hardly nothing out of it! Oh well, lesson learned...they can keep their ducks....hehehe

Hey Deb, I did the mashed potatoes like you said you do yours, now that was truly good. I loved it! Also so it wouldn't be soggy I mashed it right in the strainer then put it back in the pot and mashed with all the ingredients..thanks for the warning of making sure it was drained well Not all was lost!

oh wendy, i'm so sorry about the duck. what a waste of money. i'm happy that you liked the mashed cauliflower. i tweaked it after reading recipes. i should have said also that i mash the cauliflower in the sieve and then again with the ingredients. it's the only way to really get the water out.
what all did you put into your sausage stuffing? that could probably be a meal by itself. in this case, i guess it was.
oh well, you just have to chalk it up to experience (expensive chalk!)

Not to worry Deb...yes the sausage itself was a meal......I'm not sure if I'm allowed paxo, but used it anyway as this is part of the stuffing...Paxo, onion, egg, salt and pepper, thyme and with turkey I add sage....then of course the sausage.
