Default BLT Salad

This recipe came about because I found some wonderful Jaw slab bacon at a little market here. I was thinking that this would make the best blt's... but too bad that I cant have blt's.......or can I? This really hit the spot.



1 head romaine lettuce chopped
4 nice ripe tomatoes cut into wedges
12 slices of nice thick cut bacon cooked and cut into bitesize pieces
2 green onions, chopped

Dressing

3/4 cup good Mayo
1 tbs vinegar
1/4 cup veg oil
1/4 tsp coarse ground black pepper

Put the lettuce, tomatoes, onions and bacon in a salad bowl. whisk together dressing ingredients and pour over greens and toss....This tastes just like a BLT sandwich.

Cook the bacon ahead .. allow the fat too cool and pour off enough of the clear (the black bits will ruin this) fat to replace the oil in the dressing and use it instead.
If you have a grill handy lightly grilling the romaine (split the heads in half) before chopping adds a nice flavor.
I used to make this at the restaurant for a lunch salad special (with croutons) whenever romaine was on sale. VERY popular

The trick with the bacon fat is a good idea.....I had really wanted to keep the mayo taste of a blt while thinning it down to a dressing consistency. How bad could it be using the bacon fat tho.......You remember what George on Seinfeld said about velvet? "That if it was socially acceptable he would just wear velvet draped around him"........I feel the same way about bacon and bacon fat. Thanks for the tip.

Last night I made my dressing with the bacon drippings replacing the oil. It made the dressing that much better. Now I will only make it this way. My family just loves this salad. When you think you just can't put another bite of lettuce in your mouth.......this salad is the ticket.

Without messing with your recipe too much, you might also try adding one or more of the steak seasonings in the dressing as a variation in place of plain black pepper. The ones with big granules of garlic, onion, pepper, lemon etc work well. I also chopped up a burger patty for "BLT Burger salad" and added grilled turkey for a "Club Sandwich salad"

I've been making this type salad all summer while fresh tomatoes were in. I love it!! Great idea about the bacon drippings-this will be in my next BLT salad. I, also, grate cheddar cheese and put on it sometimes.

This has become one of my weekly staples along with a grilled chicken ceasar salad. I love the idea of a quick one bowl meal. even our 10 year old loves these salads. I wish I had fresh garden tomatoes to put in it, tho..... I just can't get anything except basil to grow in this heat in the summer.......this winter I will get some garden tomatoes, but nothing like my gardens could give me back in Illinois.

Yet another side note.

The mayo and bacon fat mix can be a base for many things.

You can easily flavor the bacon fat by taking the clean drippings and pouring them into a warm pan and adding herbs and/or whole spices, the warm bacon fat draws out the flavors.
Italian herb blend for instance, gives the mayo blend a pancetta like flavor, if you add crisp fried thin sliced ham cut into strips you would think is IS pancetta, a dollop on top of a chicken breast is pretty tasty

yes, I am a big fan of bacon fat......I save it and when I have a 3 pound coffee can full, I make homemade lye soap with it. That satisfies my inner prairie woman.....Praise the Lard!!!
