Default Best Peanut Butter Cookies Ever!

I made the best peanut butter cookies last night by tweaking an almond cookie recipe I had found. Try it for yourself and you will be pleasantly suprised.

2 Cups almond flour
1 stick butter softened
1/2 cup splenda - I actually used 1/4 cup splenda and 1/4 cup Fran Grare's Miracle Sweet (zylitol) and it worked wonderfully.
1 tsp vanilla extract
1/2 teaspoon salt
4-5 Tbsp Carb Options peanut butter - This is appoximate since I was experimenting and didn't exactly measure but start small and keep adding to suit your tastes.

Bake ~ 325 degrees for appx 15- 20 minutes. These are a little crumbly but are so wonderful. I actually cut up a Pure-Delite milk chocolate bar and stuck a chunk on each cookie after taking out of the oven so they turned out just like peanut butter kiss cookies.

Hey there,

I read your post on the PB cookies, could you please tell me how many carbs per cookie or how many carbs this recipe has? It sounds s-o-o-o yummy. I like to try it.

HI - The miracle sweet is terrific - $12.99 for a one pound can, so expensive, but it works spoon for spoon the same as sugar. We don't make that many sweets - cheesecake once a month, cake maybe once a week if we don't have the cheesecake around.

The almond flour is usally at health food stores - Bob's Red Mill makes one, but I usually get it at my local vitamin cottage where they grind the meal themselves and it is cheaper - sold in the freezer section.

We use almond flour for lots of things, including dredging chicken, or veggies before frying and there is a pizza crust recipe that uses almond flour that we are going to try.

you can buy almond flour at your local food co-0p or health food store.
