Somebody mentioned that they could not make the cheesecake until after induction - why is this?

Kate, nuts aren't allowed during Induction. And AS, cream and cheeses are restricted.

does this mean I use 1 cup of splenda to cover for splenda and twin sugar combined and an extra 4 tbls to cover for brown sugar twin.

Yep! That's right.

I can't believe unsweetened chocolate isn't available in Oz. That seems so odd!

We're hard done by...

Actually, I think if you scour specialty chocolate shops, you can occasionally find some on sale for an exorbitant sum. I searched pretty extensively last year, but never found any, and now either use cocoa, a bit of the 70% cocoa Lindt, or even better, I have something else. Like a steak.

Default 85% and 99% cocoa Lindt

You can now get 85% and 99% cocoa Lindt chocolate. I think that it's only just been released onto the Australian market. I found it in a speciality chocolate shop this week and it cost $5.25 for a 50g block. Unfortunately there is no nutritional label on the packaging, only the ingredients, which are listed as cacao and cassonade (which I think is French for brown sugar). The girl in the shop said it must be very low in sugar as it is so high in cocoa. It is very bitter and almost black in colour.

It's a chocolate shop in Rokeby Road (hence 'Chokeby').

Karen,

I really enjoyed this cheesecake! It is by far the best LowCarb dessert I have had yet. Even my husband that doesn't really like cheesecake ate some

Thank you for this recipe

Candice
