Default Breakfast "cupcakes"

I found this recipe here: http://www.lowcarbfriends.com/recip...8/cat/17/page/1

Then I modified it as follows:

1 lb sausage, bacon, or ham
cooked and crumbled
1-2 Tbsp shredded cheese for each "cupcake"
4 whole eggs
1 1/2 cup heavy cream

Using muffin tin for large muffins (makes 6,)spray with Pam then divide meat evenly into each opening. Top with 1-2 tbsp shredded cheese. Mix 4 whole eggs with 1 1/2 cups heavy cream. Pour over meat/cheese. Bake at 400 for 30 minutes. These taste wonderful and are easily reheated throughout the week.

I make this recipe alot...its wonderful! I also like to just crack the whole egg on top of each muffin cup...gives it a much different texture. They are wonderful for days when i'm up and out too early for cooking...they microwave real quick and are even good cold!

I made a bunch of these this morning. I made a variety, ham smoked sausage, bacon, and breakfast sausage. Very tasty. I don't have a jumbo tin so I used a regular size tin. 2 makes a decent meal. I also used those aluminum liners but forgot to spray them with Pam, oops. I will definitely be making these again.

Yummy. I cut this in half and it made 8 regular sized muffins. Two of them make a great breakfast. I used what I had which was hot Italian sausage and grated Jalapeno pepper Monterey Jack cheese (plus 1/2 a small onion) and only baked it 20 minutes cause I was afraid it would get rubbery. They were wonderful. I'll make these often. Maybe next time with some chopped green chilies, chorizo sausage, tomatoes and salsa. The bacon version will be tried soon too. If you could freeze them they would be perfect. Thanks for the recipe.

You know, I can never get these suckers out in one piece. They stick to the muffin paper.
