Default Tips for Vegetarian Low-Carbers

Hi, folks. Checked this out because I have 2 vegetarian kids as well as veg. friends coming over for Thanksgiving. Any ideas for low-carb menus???

Hi. I moved this out of the sticky thread so more people will read it.

How about:

- turkey or chicken for the carnivores
- a soy chicken for the kiddies (they're available at Asian grocery stores)
- the lowest carb mushroom gravy you can find (or make your own)
- LC veggies

I know last year my mom made stuffing with low carb bread, herbs and vegetable broth. It tastes awesome!

Hello!

What a great thread! I have been wondering what other veggies do for thanksgiving!

we have tried a vegetarian stuffing recipe that was so yummy this past week!! I think I will make some and bring it to my relatives they would never know! I posted the recipe in today's journal entry if anyone is interested.

Also at the store the other day i was checking out the carb content of a tofurkey which my mom got one year that was pretty tasty. It wasn't too bad carb wise! Also Veat makes an excellent (somewhat high carb) chicken type breast dish that tastes so good with some mushroom gravy over it!

also saw a recipe for cranberries that used raspberry da vinci syrup which I just happened to find lately!

Just remembered too I have recenlty mastered a vegetarian low carb jello using agar agar powder and da vinci syrup that would be good too for a side dish for meat eaters or vegetarians.

My local Whole Foods Market is carrying a few varieties of vegetarian turkeys in their freezer.

I believe they are tofu-based...and not high in carbs. I'll check out the ingredients and report back with the brand names and carb counts.

I am going to a Thanksgiving Feast that will be totally carnivorous, so I've decided to take along a vegetarian turkey, plus my own cranberry sauce made with artificial sweetener, and steamed vegetables.

I also have a killer recipe for low carb pumpin pie.

Last year I went to a Thanksgiving get together that was really a "Stuffing Party" - one lone turkey, 10 different types of bread stuffing, and no veggies. They thought it was a great theme...I thought it was wierd.

This year I'm really prepared.

No problem!

Low Carb Vegetarian Jello

2 C. water
1 teaspoon agar agar powder
da vinci syrup of your choice

Bring the water to a boil. When it boil, stir it to get the water moving. While it is swirling around in the pan, sprinkle the agar agar powder in and stir, boiling, for 1 minute. Remove from heat and pour into medium bowl (whatever you want the jello to chill in). Add da vinci syrup flavor to taste (taste it to your liking and add a little more than you think is necessary as the flavor lessens as the water cools). Chill and voila! Vegetarian low carb jello!


It really took me many many trials to get this down. The little bottle I got of agar agar powder said to use 1 TBSP to 2 C. of water but I found this to taste like a tire after being chilled. I hope you enjoy it!
