Default Zucchini "crackers"

Before LC, my favourite snacks were potato chips, popcorn and crackers - all crunchy snacks. While on Induction, I wanted a snack with similar texture. I would slice raw zucchini or cucuber into thin slices and top them with full-fat soft cheese.

You can also fry zucchini slices until crunchy, and then do this. Actually, I haven't done that for a while...

But when you fry zucchini, it doesn't get soft?? How do you prevent that??
