Low carb Junk Food!!
Corn Dogs

1 Pkg. Wieners
1/4 C Atkins Bake Mix (for dredging the wieners)
1/2 Pkg Atkins Corn Muffin mix
2 Eggs
1/4 C Oil
1 C Water
Oil for frying

Heat oil in a deep fat fryer to 360 degrees.
Impale each wiener w/ a bamboo skewer
Dredge in the Bake Mix. Set aside.
Mix together the Corn Muffin mix, eggs, oil & water.
Dip a skewered wiener into the batter & drop into the hot oil.
Fry until golden brown on both sides. Drain. Repeat w/remaining wieners.
Approx. 5 carb grams each.

For some reason I have been craving a corn dog. I didn't even really ever like them before...go figure! Thanks for the recipe.

That's one reason I started tinkering w/the idea. Isn't it strange how we want stuff we can't have!! By the way, you can add chopped onions & jalapenos to the leftover batter and fry for hushpuppies! Or of course the old standby, shredded zuchinni.

I have no idea why I haven't thought of this. lol But I am so happy to find this thread. My son loves corn dogs so I fix them for him all the time and the smell gets to me sometimes and I WANT ONE! hehe so now I can have one and the hush puppy idea is awesome as well. Thanks!
