Default Celiac Disease - Bible on LCing

Hi All,

Someone once told me about a book that documented celiac disease that was available. Someone called it "the LC bible" and it was a book by someone other than Atkins. Anyone know what it is?

I would love to get it.

I haven't heard of that one, but I read "Dangerous Grains" which was quite good. You might try looking over at celiac.com and see what books they recommend.

It could be Breaking the Vicious Cycle by Elaine Gottschall, which is "the bible" for The Specific Carbohydrate Diet. This diet controls symptoms of various inflammatory bowel diseases, such as coeliac, ulcerative colitis and Crohn's disease.

It basically allows no starches or sugars, restricted dairy and most fruit and vegetables. It does allow honey, as well as high carb fruits, but otherwise is pretty much low carb.
