Thumbs up Tasty mussels (really!)

OMGOMG -

I found a really tasty way to eat seafood this morning. I had bad eczema last night on my right leg and realized I've been eating A LOT of eggs recently ( 6-7daily). I've heard it is possible to get sensitive to cooked eggs, so I'm trying to be creative in cooking. When you have eggs, everything's easy.

Mussels. Bleurgh. Never thought I'd actually crave them!

So I fried 200g (14g carbs) in lots of butter and they went this gorgeous caramel colour. Added chile, s& p, then cooked down some spinach with cream and butter and mixed all together, topped with cheese.

WOW. First time I've loved eating mussels. And for breakfast as well. Yum.

I used this for breakfast, and only ended up eating half of the mussels as I was full - so that's only 7g carbs. REally try it - it is soooo yummy.

Hi

Did you use fresh mussels (in the shell) or ready shelled cooked ones?

These sound really good

Hi -

I used frozen ones - I don't know if they're already cooked like that but I don't think so. I think raw is fine as you are frying them and they are so small they cook easy. The butter really makes them taste good though - they absorb A LOT of butter. Next time I'm going to add garlic as I love garlic too.
