Can I just say that I eat bacon every single day and have no inflammation whatsoever, not in hands or fingers, knees or other joints. It's my only source of salt, really.
People get funny about bacon but it's just meat. I think it's a holdover paranoia from the low fat days. Compare a serving of bacon with the diet of SAD eaters and it's still night and day.

I cannot get pork belly or fresh side pork anywhere around here. I've been to Publix, Winn Dixie, Walmart, and a Save-a-Lot. I tried a meat market and they looked at me like I was insane.

Oh well, the pound only stays on for one day.

I don't eat it every single day, but I totally agree with you. The whole alarmist attitude about bacon being "processed" meat is really ill-informed, too. It's sliced up, salted pork belly. Lots of it doesn't even have nitrates these days, just celery salt. I could easily make it at home, if I wanted to.

I wish we would come up with a better definition of "processed" food. Everyone freaks out about bacon because it's supposedly processed, but no one worries about deli meat which is injected with water, soy, and who knows what else. But it's low-fat turkey, which is so awesome for you.

i now like whole foods for bacon... no nitrates, non-smoked, no sugar. and a variety that are similar.
