Default I'm a Genius Shrimp

OK...
I have to admit. I'm a genius with this one.
Found some Maine shrimp at Whole Foods for $4.59 a pound. I got a pound and a quarter (yes...JUST FOR ME!)

Boiled them up in 2 minutes and then shelled them.
Took 3 TBSP (ok...might have been a tad more) of Mayo
1 dollop (maybe about a teaspoon) of dijon mustard
2 drops of liquid Splenda (maybe 1.5 packets worth???)

I mixed the mayo, mustard and splenda - intending it to be a dip.
Got tired of trying to dip shrimp in and scoop, so I dumped all the shrimp in and coated them all up.
Eat with a spoon.

Ya know, that really is brilliant. I looooove dip, but having nothing except celery to use as a dipper gets boring. Next time I'm going to bring shrimp to dip in stuff.

shrimp with guacamole
shrimp with bacon horseradish dip
shrimp with crab dip!!!
shrimp with spinach dip!

OMG. I'm gonna try this...thank you!

I used the sauce for salmon burgers yesterday and they were out of this world as well. Thanks! I love super simple recipes.

I do something very similar to make chicken breast more palatable but I never thought to add a wee tad of sweetener - I'll try it that way next time I'm stuck with nothing left of the chicken but the breast!

Glendarc - where's your journal?

Another option for chicken breast (when you have nothing else) is this:
Season LIBERALLY both sides with kosher salt.
Panfry in a mix of peanut oil and BUTTER.
Hot enough to get both sides brown and the center just past pink.

It's pretty good when you have nothing else to put with it. You have to get the timing down, though, so it doesn't dry out.

This is along the lines of a Chinese dish called "Shrimp with Walnuts" except there are no walnuts. The Chinese dish uses honey and adds some orange flavoring (possible orange zest).

I've been craving the Chinese dish - I've only found it in Cali. But this might be a good sub.
