Mmmmmm!! made this for dessert but just guessed 2 servings, using 2 Tbsp each of cream cheese, sour cream, whipping cream, cocoa powder and 2 packets of splenda. Delicious! I would not be able to keep 12 servings in my fridge without eating it all!

I made this dessert on Sunday and I am eating it throughout the week. It's really delicious. I divided it into four parts and stored them inside sealed plastic containers. Then I stored them in the refrigerator. Since I only divided it into four portions, each portion is about 500 calories, most of them fat. That's a meal! I eat them on the days I work out, since I'm supposed to eat more calories during these days.

This has been a quick favorite of mine for years.

I think I might replace the cream cheese and confectioners sugar in the following recipe with the cheesecake pudding. But maybe I'll reduce the sour cream and HWC to thicken it a bit. Stuffed Strawberries

Prep Time: 30 Minutes
Ready In: 30 Minutes
Servings: 4
"Fresh strawberries are filled with an orange-flavored cream cheese. Yum, yum! Sometimes I add some finely chopped semi-sweet chocolate. These are perfect for baby showers or wedding showers."

INGREDIENTS:
1 pint fresh strawberries
1 (8 ounce) package cream cheese, softened
1/2 cup confectioners' sugar, or to taste
2 tablespoons orange flavored liqueur, or to taste

DIRECTIONS:
1. Cut the tops off of the strawberries and stand upright on the cut side. Make a cut 3/4 of the way down from the tip of the strawberry towards the bottom.
2. Beat together the cream cheese, sugar, and liqueur until smooth in a mixer or a food processor. Place into a piping bag with a star tip. Pipe into each strawberry and arrange on a serving platter.

This is a quick and very tasty desert -- if you haven't tried this you are missing out.

I use about 5 packets of stevia insted of Splenda -- Tastes good with fresh strawberries and blueberries.

I also experimented with cocoa powder. I did that but wanted it just a little more choclatey so I added a couple of capfulls of choclate flavored Da vinci's syrup (a no sugar syrup sweetened with Splenda) along with the coaoa powder That was pretty darn good.

Next time I think I will make the original recipie and add some 86% or 90% chocolate pieces mixed in.

Hi RuthyRuth - if you use the basic recipe (i.e. don't add things like strawbs or cocoa), use liquid Splenda (granular Spenda isn't suitable for Atkins), and abide by the limits that Dr. Atkins puts on dairy and carb consumption, it is fine for induction.
