Default Bacon Explosion

I don't know why I never thought of making a Bacon Log. They might even make a great snack item.

When my hubby makes a big roast orThanksgiving tukey, he criss-crosses bacon over the whole thing. No basting needed,
then when he carves, he puts the bacon pieces (now welded together!) in the same bowl as the stuffing (which of course is virtually all sausage) and that is what everyone goes for!

Sounds pretty salty. Maybe it needs a roasted pork tenderloin in there. Then it would be more of a dinner item.

If I made it for a snack I think I'd throw some pickled jalepenos in there, or make a sour cream and Dijon mustard dip for it.

Alas, I'm getting off dairy to test my sensitivity.

I am going to make a pork tenderloin bacon log for sure! Or a meatloaf bacon log would be good too. The bacon and cheese idea is too rich. Tho bacon cheese and beef would be a good combo. Like a bacon cheeseburger meatloaf.

I also like the idea of wrapping bacon around something cone or log shaped and baking it crisp, and then filling it with chicken salad. That would be lovely!

Oh my that is such a good idea...I love bacon and cheese. You could get so creative with the concept. I think chicken would be good in there too...with a Ranch dip...or a LC "honey mustard"

You could also add eggs to it once you cut it and it could be like a breakfast taco!

Default Bacon cheese roll

I took 11 slices of bacon.
5 from top to bottom, 6 from side to side.
Preheated oven to 400 degrees.
Lined a casserole dish with foil.
Weaved the bacon in a basket weave fashion.
Bake about 15-20 minutes.
Place on paper towels, top with cheese, roll up and microwave for about 25 seconds to melt the cheese.
Slice and enjoy!

This was so good.
I could have eaten the whole thing.
I had to put it away so i didn't.
It is the perfect combo of fat and cheese and crunch.
It would also probably be good with cream cheese and sliced jalapenos.

green onions, diced tomatoes & green peppers, pickled jalapenos, and sliced black olives...

And serve with salsa and sour cream.

God, I think i'm drooling!!!!!!!!
