Default Obscure carb count question...SOY PAPER??

I have found a great Sushi place which does some rolls without rice (they use crab as the "filler"). Instead of nori (seaweed), they use SOY PAPER. I cannot find the carb count on soy paper anywhere. Does anybody know the scoop?

(By the way, for those in L.A., the place is Hamasaku; it is excellent.)

Never heard of it but I'm curious to know too.
Make sure they use real crab, the Sushi buffet by me uses the artificial crab which is high in carbs. The place by me also started putting Sashimi on the buffet, I think becuase so many people were taking the sushi and picking the fish off and tossing the rice to the side! (yes i'm guilty of that lol)

Interesting! Soy is a pretty low carb food though. I wonder why they don't use Nori? That would be low carb.

this place that I go to once in a while will make rolls without rice, but they use nori. I have never heard of soy paper... what does it look like?

OK, I did some more research...I found a manufacturer and called them; it is less than 1 g of carbs per "paper". it is a very thin tortilla-like thing, but square and thinner than a tortilla. They do use nori for some rolls, and soy paper for other rolls (they also use very thinly sliced cucumber to wrap some rolls). It doesn't really have much of a taste, but I do kind of like it as a change from nori. And yes, the crab is real (not that nasty sweet fake stuff), shredded and mixed with a little mayo, I think, which binds it.
