Default Scrambled Eggs Italien Style

Because we have so many hens, I eat a LOT of eggs. A lot! That also means they become boring so fast. THis receipe definitely is not boring and I can eat it for breakfast almost everyday. Maybe you will like it too. It is easy to alter the quantities of each item to your liking.

In a small skillet, add 1T butter.

Add 1 tsp fresh thyme leaves, or marjoram, or rosemary if you like pungent but only use 1/2 tsp or less if fresh.

3-4 olives from the deli salad bar

break up 1 oz of feta cheese and add to pan. when it is bubbling along the edges add 2-4 whole eggs, depending on how hungry you are.

Stir eggs making large soft curds.

PLate and top with 1 tsp extra virgin olive oil
