Coconut Flour Pancakes
I like doing this recipe in a quart mason jar and using my immersion blender with the whisk attachment. Then there isn't too much to clean up afterwards.
Heat oil in a pan on the stove top.
Mix up:
2 heaping Tbl. of coconut flour
1 tsp of baking powder
Optional spices and flavors (cinnamon, splenda, nutmeg, splenda etc)
Optional to help rise and make it easier to turn (glucomanan flour -- 1/4-1/2 tsp, xanthan gum -- a pinch)
Optional -- 1 heaping Tbl of hemp hearts (Just because I have a lot I need to use up!)
Mix all the dry ingredients using the whisk attachment.
Add in:
2 eggs
Whisk them in. Let the mixture set for 5 minutes or so and add enough water to make it pourable but thick and whisk again.
Pour into the pan and cook about 4-5 minutes each side, but don't burn them.
I serve it with butter, sugar free syrup (like Monin boysenberry) and sometimes frozen raspberries that I heat in the microwave.
DELICIOUS!
Optionally: Drop some chopped nuts into the batter -- pecan pieces are great for that.
