and if you ever get a chance to buy fresh unhomogenized milk from a Jersey cow, never pass up the chance to make your own fresh homemade butter. The deep yellow color is astonishing!

that deep yellow is the star nutrient vitamin K that helps metabolize calcium properly.

Look for dark orange ghee in stores too.

Great ideas. Think I need to subscribe this thread. I am in a temporary 'meh' stage on low carb higher fat eating. Don't hate it, just not feeling creative about it. Maybe this will jump start my thought processes. Thanks all!

Here's some butter I made early spring last year... and that was before the grass really started growing.

The butter got even darker late May through late June, nearly orange... which freaked out some people I gave it to.
Fine with me.... all the more for me! lol

I love eating butter (and raw ground beef, but that's another thread ).

As a child I recall my Grandma melting butter and putting in a tinfoil tart shell and I would drink it. Yum!

You can make compound butters out of almost anything.

Butter and:
  • garlic
  • curry powder
  • minced fresh herbs of your choice (sage is quite good; rosemary took a while for the flavors to blend, then it was quite good, too)
  • any spices
  • BACON bits and chives (from MDA recipe)
I am very free when I make these.
I soften a stick or two of butter (leave it out over night).
Then I stir in whatever I'm making it for (example: minced garlic and parsley to go on a steak! or curry powder to go on some sauteed chicken; or horseradish and minced shallot or onion to go on a pork chop; or chili powder to go on something; you get the idea).
I think they taste better after sitting overnight (or longer) in the fridge.

You could make a sweet compound butter with cocoa powder or melted unsweetened chocolate and cinnamon and sweetener of choice (might want to pulverize it so its a powder, or use liquid stevia/splenda).
Make some LC pancakes topped with berries and a plop of this butter
or some warm compote topped with this butter
or heck, just scoop out a bit and suck on it!

Terrific info, thank you so much I started thinking about this when looking at Tommy's Eat Low Carb High Fat blog, he uses a bunch of different compounded butters.

No, I'm not talking about butter in recipes, butter as a dip, or butter as a spread. I'm talking about the wanton disregard for tongues as they lick butter off knives, or even more shocking, the wanton disregard for sanity as they actually EAT IT like it's a bite or two of pudding.

This is nearly as big a surprise to me as alt.sex.stories was back in the 90's. I have never even heard of such a thing.

Confess! Who out there is a butter snacker? And does this "extra oil" do anything useful for you?

I just found this thread, but you had me at "alt.sex.stories".

Yes I eat butter. When a server brings bread and butter to the table, I ask him/her to remove the bread but leave the butter!

I also ask servers to take the bread away and leave the butter. I'll never forget the look on a new boyfriend's face when I ate a piece of butter just by itself, lol.

As kids, when we were sick, my mother would give us hot milk with butter melted in it, so yummy. I always thought that was buttermilk, until I grew up and learned what buttermilk really was.
