Default Hamburger and Broccoli Slaw Stir Fry

This one is way too easy:

1/2 pound burger (not the leanest variety)
1 cup broccoli slaw
1/2 tsp. ginger, chopped fine
Soy sauce to taste

Grab a non-stick skillet and cook the burger until crumbly. Add the ginger and cook for a few moments and then add the broccoli slaw. Stir fry the whole thing until the broccoli is done to your liking and then add a bit of soy sauce. Serve immediately. Serves one.

Adjust amounts to your liking, of course. You can use just the burger and slaw, add cheddar cheese to the mix (no ginger or soy sauce, unless you like that sort of recipe) or add Tabasco to it. I think it's pretty versatile and extremely easy to get your serving of veggies with the meat. There are shredded carrots in the package as well, you might want to pick them out first, but I think it's a trivial amount of higher-glycemic carbs and might not be worth the worry. I also suppose the ginger might have more carbs, too. But at least you're not eating any bread, right?

My daughter makes this as a filling for egg rolls. I make it just on its own.....when I don't have the broccoli slaw I use the bagged cole slaw mix. Yummy. This is a good recipe.
