Wink Sausage Ball

These are pretty LC- if you used Atkins bake mix or soy it would be even better, but all I had was Jiffy. Mix together: 1 roll sausage (I like Jimmy Dean) , 2 cups shredded cheddar (the higher quality, less grease) 1 scant 1/2 c Jiffy (or sub), salt, pepper, and Bells Seasoning to taste. (Bells is an awesome seasoning for stuffing- I have to order online- they are in New England somewhere!) Make appx 30-35 sausage balls. Bake on a broiler pan at 375 for 10-15 min till lightly browned. The Jiffy adds 42 total carbs, so they are a little of 1 carb each. I usually eat 3 or 4 for a snack- I really like them and they fill me up!
