Candice's Chocolate Peppermint Drops



I have been craving chocolate for days now. I really wanted to eat something low carb, but just did not want a lot of calories or anything big. So came up with these. They are just small little things that take the cravings away.. Perfect! You can totally change up the flavor by using different sugar free syrups and extracts. I was really wishing when I was making these I had raspberry syrup but I didn't.. next time!
My son is absolutely hilarious after he ate one. He says, "Mama! Delicious! Favorite candy ever!" Totally made me start laughing. Such a silly boy!


Hope you enjoy as much as I do!


Ingredients:

for 30 drops:
1/2 cup unsweetened cocoa powder
3 Tablespoons unsalted butter(1.5oz)
6 Tablespoons Sugar Free Peppermint Syrup(I use DaVinci)
1/2 teaspoon peppermint extract
------
for 15 drops:
1/4 cup unsweetened cocoa powder
1.5 Tablespoons unsalted butter(0.75oz)
3 Tablespoons Sugar Free Peppermint Syrup(I use DaVinci)
1/4 teaspoon peppermint extract



Instructions:

In a heat proof bowl, melt butter in microwave. Let cool a minute.

Add sugar free syrup & extract to butter. Stir in cocoa till completely smooth.

Fill a pastry bag or baggie* with your chocolate and pipe out your drops onto a piece of cookie sheet lined with parchment paper. Transfer to the freezer and let set up at least 10 minutes before eating.

Just a note: The chocolate mixture is soft so be careful piping as it will run out quickly!



These need to be stored in the freezer.


*I use a pastry bag with a star tip. But you do not need these. You can just use a plastic baggie with the corner cut off(cut only a little!)

Nutritional information for one chocolate drop:

Energy 18 kcal
Carbohydrate, TOTAL 1.07 g
Sugars, total 0.00 g
Fiber, total dietary 0.53 g
Protein 0.28 g
Total lipid (fat) 1.42 g

NET CARBS: 0.54g

Well, I think I'm finally really going to find an equivalent to the sugar free syrups, this looks just great.
