4-Ingredient Keto Sparkling Wine and Strawberry Jelly


Ingredients:

1 1/2 cups = 350 ml dry sparkling wine

(Chateau De Fleur Non-alcoholic Sparkling Wine is an excellent substitute for us teetotalers )

2 teaspoons gelatin powder
4 large (organic) strawberries, hulled and sliced
10-15 drops (or to taste) vanilla stevia

Method:

Pour 1/4 cup (60 ml) of the sparkling wine into a heat-proof cup. Sprinkle the gelatin powder on top. Let bloom for 5-10 minutes.
While the gelatin is blooming, divide the strawberry slices into 4 serving glasses.
Heat the wine and gelatin mixture in a microwave or in a small saucepan until the gelatin is completely dissolved. Set aside.
Pour the rest (1 1/4 cups = 290 ml) of the sparkling wine into a bowl. Add gradually the hot wine and gelatin mixture while vigorously whisking.
Pour some of the wine and gelatin mixture to the glasses, over the strawberries, so that the strawberries are just covered with the mixture.
Place the serving glasses in the fridge for 30 minutes, or until the gelatin is set. Keep the rest of the wine and gelatin mixture at room temperature. Don't let it set, but keep it liquid.
Once the gelatin is set on the strawberries, divide the rest of the wine and gelatin mixture to the serving glasses.
Place in the fridge for 4 hours, or until completely set.
Decorate, for example, with whipped cream, edible flowers, and crushed freeze-dried strawberries.

It really is. It's really pretty too. Although I didn't have any tiny edible flowers or freeze dried strawberries to garnish, it still looked kinda impressive. For my cooking level anyhow
