Default Timing from beginning of meal or end?

I'm wondering if one is better than the other. I used to note when I started a meal, then test 1 or 2 hours from then. But I found it easier to note the end of the meal, so started doing that. I figured that as long as I was consistent, it would be fine.

But then I read a comment from someone, somewhere, that made me wonder. Is timing from the beginning of the meal better?

I was taught to test from the beginning. I imagine that's because the meal can last ages but my body starts reacting right away. I don't normally drag out my meals though so it probably wouldn't make much of a difference for me either way.

Why not test both and see if there is a difference for you?
