Default Cauliflower and chicken pesto

I just tried this and it was great! Not quite sure of the carb count, but it can't be too bad. Cook up some cauliflower (frozen is fine). Add some hot cooked chicken (I poached some chicken tenders in water, then cut inot bite-size pieces). Toss with some pesto, maybe a little extra olive oil if you need it. Enjoy!

I tried this last night. It was excellent! I love pesto, and this was a great way to use it in a healthy way. Thanks so much.

In fact - i loved it so much, i brought the left overs for lunch!

sounds great - i have been thinking what to have for dinner all morning!

pesto & chicken are amongst my fave foods still allowed on atkins!

Pesto is a paste made from fresh basil, pignoli (pine nuts) or walnuts, and (I think) olive oil. It's VERY good. Check the ingredients if you buy it, though. Some pesto has parsley in it as a "stretcher," and those kinds aren't very tasty.
