This is one of my staples for breakfast. Very good and a nice change of pace from eggs, although I still love them too!

I took this idea and ran with it...
1 can of pumpkin
1 can of coconut milk
3 eggs
1/2 cup almond flour
1 cup xylitol i think
spices

I baked it in a square pan for about 40 min;trying no to use the microwave that much.
This was so good. I ate it war but I wanted to have it in the fridge but between the family and a neighbor, even the pan disappeared!

Which plan are you following? If Atkins, sorry, but no. It has almond flour in it, and nuts are not allowed on Atkins Induction.

If you are following South Beach, you should ask on the South Beach forum (with a link to the recipe).
