Hi,

In original recipe you make reference to grated cheese. What type of cheese do you grate?

My wife makes a substitute mashed potatoes by heating frozen cauliflouer in the microwave and then adds carmelized onions, salt, pepper, nuked frozen spinach, butter etc etc.

I am curious whether you it might be possible to use the microwaved frozen cauliflouer in lieu of the spaghetti squash + all your other ingredients? Look forward to your reply.

Hi Alan!

If you can go back to the original post where you read about the latkes and post underneath it by hitting "reply to post", whoever posted the recipe will be able to answer you if they are still using the forum. You've started a new thread and we don't know what recipe you are referring to.

Congratulations on your new book.

Sorry that I posted in the wrong place but you know how men are. Good under the hood of a car and useless most other places.

I will try and find the original posting but I found the Latkes under "Snacks" for reader's recipes.

By the way, tried them tonight and they were very good.

Not at all Alan! Don't put yourself down!

Mashed cauliflower might work, as long as it's squeezed dry. Raw grated zucchini works too, but again, squeeze out the water.

I would think that any grateable cheese you are fond of would work.
