Default Low Carb Recipes for One

Does anyone have any sweet recipes for one that they could post. I just want something that I can whip up and eat if I want a desert. I Don't really want to make a full cheesecake or 24 cookies etc.

I like smoothies with 1 cup vanilla soymilk, 4 oz vanilla yogurt, 1/2 cup frozen blueberries (or other frozen fruits like strawberries or peaches. I dont like raspberry because of the seeds though) and 1-2 TBL cream cheese and enough ice to make it thick like a milkshake. Other easy things to whip up are cream cheese mixed with sugarfree jam and a little vanilla divinci syrup. Ricotta cheese mixed with splenda and vanilla extract and topped with fresh raspberries and walnuts is good. I also love cottage cheese with walnuts and cinnamon and a splash of flavored syrup or splenda or cottage cheese with cantaloupe and strawberries is really good too. I am not someone with a major sweet tooth though. I would choose a slice of bread over cheesecake any day of the week. Now apricots are another story though.

Thanks Jenn, you have given me several ideas. I don't have a really sweet tooth and can go without for weeks but sometimes I just get that feeling. I figured therefore that it would be best to have some ideas handy so that I am not tempted to open a packet of biscuits or make a full cream custard or something like that.

You are allowed full cream custard on atkins... although there are many recipes where I have substituted egg beaters for the eggs and buttermilk for the cream. Most recipes are pretty forgiving when it comes to adapting them to what you need (especially the egg based dishes) Just sub low-fat for regular if you are watching calories and if you need to sub out a liquid, try to find something of similar consistancy.

Last night we made zip lock baggie ice cream. It was really good, I got it from the recipes here on the forum under sweet treats.

In a sandwich zip lock bag put 1 tablespoon splenda, 1/2 teaspoon vanilla extract and 1/2 cup heavy cream. Close bag and squish around to mix.
In a gallon zip lock, put the first zip lock with the mixture in, add 3 cups ice and 6 tablespoons table salt.
Close the bag and shake, move, giggle, ect for 5-7 minutes.

When the ice cream is hard, take the small bag out and rinse in ice water, to get the salt off or else you have salty ice cream.

I added raspberries to mine. My son added a little cocoa powder and additional splenda. You could also add nuts.

I comes out like a soft serve, we just ate it right out of the bag!

I take a container of sour cream, cream cheese, and enough heavy cream to make it frosting-consistency, add 5 packets of splenda and beat in a bowl. I put this in the fridge in a container, and every morning I have a few spoonfulls or at night, keeps the sweet tooth at bay, adds some extra fats, and I find that I don't need so much because it tastes GOOD.

Rhubarb is very low in carbs. I buy it canned (without syrup). I eat it with cream or home made custard - nothing but egg, cream and sweetener.

We have a whole forum for sweet treats here. There are lots of recipes that are easily made as a single serving.

Here's one I used to make quite a lot before I trained myself to stop having dessert every night .

2-3 oz cream cheese (the brick, not the tub)
2 tbsp sour cream
Splenda to taste (I like it sweet so I put about 3 tsp of loose splenda)
flavorings (vanilla extract/unsweetened cocoa/ instant decaf coffee, etc.)

soften cream cheese in microwave about 20 seconds. Stir in sour cream and splenda and flavorings. Refrigerate a few hours.

It turns out sort of like a crustless cheesecake consistency. Can't recall the carb count on it but I think it's something like 4 carbs for the whole thing.

found this one on another website. It was great, but I had to add some cream to the mixture first, as it was too dry.

Molten Chocolate Cake for One
2 Tablespoons Unsweetened Cocoa Powder
2 Packets Splenda
1/2-1 Tablespoon Atkins Bake Mix (or Carbsense Zero Carb Bake Mix)
1/4 Teaspoon Baking Soda
1 Egg White
1/2 Teaspoon Vanilla Extract

1. Beat Egg White until bubbles form. (Frothy)
2. Combine Dry Ingredients in bowl.
3.Whisk Dry Ingredients into egg white and add vanilla.
4. Bake in 375 degree oven for about 10 Minutes or until center is still fudgy.
