Low Carb Hot Chocolate



Source of Recipe: personal recipe

List of Ingredients

1/4 cup Splenda
2 tbsp. baking/unsweetened cocoa
dash salt
3 tbsp. hot water
2 cups "Hood's Carb Countdown" dairy beverage, or other low carb milk
1/2 tsp. vanilla extract

Recipe

Mix together splenda, cocoa, salt, and hot water in a small saucepan until smooth.
Bring to a boil.
Lower heat, and stir in dairy beverage until blended.
Heat mixture until hot, but do not boil.

Serves: 2

I've been making hot chocolate similar to this but I've been using 1/3 cream and 2/3 water. I just use the instructions on the side of the cocoa container. Most have a recipe for hot chocolate. Just replace splenda for sugar and cream/water or carb countdown for milk.

I haven't seen any Carb Countdown "milk" in this region in years. But thanks to a suggestion from Citruskiss, I was able to make a pretty good cocoa:

She suggested using "special dark" cocoa powder, but I didn't have any, so I just used regular Hershey's unsweetened cocoa, and measured the other ingredients with a "regulation" shot glass (the one where a line marks off 1 ounce).

2 Tbs unsweetened cocoa powder; 2 "shots" of cream; 2 "shots" of SF syrup (I used raspberry)

Whisk the ingredients together in a large mug until you have a smooth paste; add boiling water and continue whisking until combined to your satisfaction. You may need less SF syrup - I used 2 shots because my cream was going a bit sour.
