Asian Chicken Salad
Hey Gang,
Here is one my family eats regularly. Tis so good the recipie can actually be found on the side of the incredibly high carb Club Cracker box. Wasn't meant to be low carb - just turns out that it is.
Ingredients.

1 cooked whole chicken breast - 0.0 total, 0.0 net
1/2 cup red bell pepper, diced - 4.8 total, 3.3 net
1/4 cup scallions (green onion), sliced - 1.8 total, 1.2 net
2 tbsp real mayonnaise - .2 total, .2 net
2 tbsp soy sauce, - 2.0 total, 2.0 net
1 tbsp sesame oil, 0.0 total, 0.0 net
Totals - Whole Dish
8.8 total carbs, 6.7 Net
makes 3 cups

To cook chicken, bring one quart of water to a boil, add chicken breast, reduce heat and simmer for 20 minutes.
Mix together mayonnaise, soy sauce, and sesame oil to make the dressing. Combine remaining ingredients and mix all together.
Serve over large leaf of lettuce. Add in about .6 net carbs forever how much lettuce you choose. You'll find that after the chicken mixture has been sitting on the lettuce the lettuce itself will be flavored with it's own dressing beautifully.
Should also add that this dish looks lovely on a plate. The dark green of the scallions mix in brilliantly with the vivid red from the bell pepper on the white background of the chicken. Also, although this is a salad at my house this is usually served as the main course. We just like it that much.
Wasn't meant to be 'low carb' either. Just happens to come out that way.
