Arrow Macadamia Nut Joys

Macadamia Nut Joys

Beat 3oz cream cheese with 1/2 cup unsweetened coconut, 3pks
sweetener and enough cream to make a stiff, but workable 'dough'(2-3
tablespoons).
Spray a sheet of foil with butter flavor pam and turn up the edges to
make a 3" x 6" shallow pan.
Melt a low-carb chocolate bar(may need 2 if they're small) with 2T
heavy cream and pour 1/2 of it on the foil.
Pop in the freezer for 10 minutes to harden, then spread the cream
cheese/coconut mixture over it. Press several Macadamia's into
the cream cheese mixture at this point and then pour the rest of the
chocolate over it, spreading to cover the cheese filling. Refrigerate
until set hard(about 2 hours)then cut into 6 - 1"x3" bars
Each bar is about 2g carbs (will vary depending on how many Macadamia's you use).

These are pretty good and almost taste like the real thing!

No comments? This is really really good, just make sure you use a dark lc choc to make it with. My last batch I used a choc with almonds,,, couldnt spread it thin enough. Go figure!

This sounds incredibly good!! Cannot wait to make them. I really miss almond joys, and this sounds like it will hit the spot!

Another note,, even tho it wasnt as good with the choc almond choc,,, the filling was. I added a few drops of stevia extract to the coconut "dough". It really did taste like almond joy coconut!
