I think the American breakfast sausage is pork based, with various spices added, and like our sausage, it can be shaped in patties or links. Here's a recipe, just to give you an idea:

You might be able to find a butcher here who makes all meat sausages - the better quality butchers often do. Failing that, you could check out Lidl - our Lidl sells sausages with something like 94% pork.
