Default Bread crumb alternative idea for you...

This would be for post induction..

We went to Costco a few months back and bought some "Gen Soy Nuts". The purpose was for snacking, but when I actually tasted them, I was very dissapointed and they were put into the cupboard where they sat until recently. One night while whipping the porkrinds into crumbs, I had the idea to throw in the soy nuts. I added some parm cheese and other seasonings and EUREKA!! Breading!! I use this ALOT! In hamburgers, meatballs and meatloaf, coating for chicken and fish. It's very LC. The soy nuts have great fibre. I feel better about using it then just the pork rinds, because it actually has some health to it.

Just thought I'd share!

Thanks for the idea. I'm going to try it. I feel the same way about using the pork rinds - it feels like I'm being so unhealthy! Soy will help a lot!
