Default No Bake Berry Cheesecake w/whole milk yogurt

Along with a sweet and fluffy treat, you get a healthy dose of probiotics in this ultra creamy, No-Bake Cheesecake! It's a great way to use up those summer berries.

No-Bake Berry Cheesecake

Serves 8-12

Ingredients:
8 ounces cream cheese, cut into chunks, warmed to room temperature
8 ounces plain greek yogurt (I like Fage Total), liquid drained off
2 Tablespoons lemon juice
1 ½ cups heavy cream
1 envelope unflavored gelatin
1/2 cup Truvia OR ½ cup homemade sweetener blend* (see notes)
1 teaspoon vanilla extract
2 Tablespoons lemon juice
1 teaspoon of lemon zest from 1 lemon
Pinch sea salt
2-3 cups of fresh berries, sliced or whole

For the Filling:
1. Pour ¼ cup heavy cream into microwave safe measuring cup.
2. Add gelatin powder and whisk to combine. Let the mixture sit until gelatin has softened, about 5 minutes.
3. Return cup with gelatin cream mixture to microwave and heat on HIGH for 4. 30 seconds, or until gelatin in completely dissolved. Set aside.
5. In a large mixing bowl, pour in heavy cream and sweetener. Beat at medium high speed until soft peaks form. This should take roughly 2 minutes.
6. Add softened cream cheese chunks and greek yogurt to whipped heavy cream, and beat about 1 minute on low speed, until combined with only a few small lumps of cream cheese remaining. Scrape sides of bowl with a spatula to ensure everything is combined smoothly.
7. Add lemon juice, lemon zest, sea salt, and vanilla and beat for another two minutes, or until mixture is smooth.
8. To the large bowl, scrape in the heavy cream-gelatin mixture from the glass cup, and beat until light and airy, about 2 minutes.
9. Spread filling evenly into cooled tart crust using a spatula dipped in hot water.
10. Refrigerate for a minimum of 6 hours (overnight is recommended). Cover filled tart with a plastic wrap to prevent a skin forming on the surface.
Just before surface, slice up berries and pile them atop the tart. They don’t need to be arranged perfect, until you’re insanely type A about your desserts (guilty!).
11. Alternately, you can use a springform pan to make it look more like a traditional cheesecake. You could also spoon the filling into jars and layer it with berries, like a parfait. Sprinkle with toasted sliced almonds, large flaked cocount, and more berries for a festive garnish!
