We had this last night and it was a big success. My 11 yr. old even loved it. Casey, the bacon wasn't as crispy as I like it so I raised the temp. to about 450 for about 7 extra minutes and it came out great.

My hubby makes these all the time for me....we put a cube of chedder in the middle and grill them in foil on the grill.

First you flatten out the breast or thighs, by either slicing them through the middle or patting them out. Than you line them in a baking dish, cut the cream cheese in cubes, and place a cube of cheese in the middle of the chicken. Than wrap the chicken around the cheese, and take either a half or whole piece of bacon and wrap it around the chicken. Use toothpicks 2 or 3 to hold in place. Sprinkle w/onion, garlic and salt. Bake in the oven at 375 for 25-30 min. ENJOY!

*SO CREAMY and DELICIOUS!

Oo... My wife adores cream cheese! We'll have to try this soon!

i kinda made this the other night... it was really good..... i just topped it with the cream cheese and wrapped it with bacon.. im not good at flattening chicken or stuffing or whatever..... i cant wait to try the variations.. ive got a packet of ranch seasoning i might try Erins suggestion tomorrow to change it up a bit...
