Default soft foods & yoghurt made with cream

Hi!

Yesterday I had braces put on my teeth - at 37! The dentist warned it could be pretty painful...she was right. Eating is not fun right now.

Consequently, I am looking for suggestions for soft foods. I'd really appreciate anyone who could share a bit of creativity

Also, I miss yoghurt. I have a yoghurt maker. Does anyone know if it is possible to make it with cream?

I would make cream soup my best friend.

This is a good, basic recipe. You can even puree cooked chicken into it.

Basic Vegetable Cream Soup

Other suggestions...puree avocado or soft tofu with boiling chicken stock, return to the pot and heat just to a simmer. Season to taste - lime is nice with the avocado.

Eggs scrambled with cream cheese and smoked or canned salmon would be easy on your mouth too.

I forgot to mention that it is HOT here at the moment. I don't know that I can do the soup thing - at least not til DH comes through with the airconditioning he promised I'll have a go with adding some salmon to egg, though. Sounds nice.

I'd love to know about the yoghurt. Can anyone help?

Default about yogurt

Hi,
I make yogurt with heavy cream.
Sometimes I mix it with one cup of 10 & cream to feed the culture. Most times I put in one tablespoon of non instant skim milk powder
The yogurt turns out wonderfully
I have read that the longer the incubation the less lactose is present.
Personally I don’t like it too bitter.
The creaminess of the product is incredible
Please let me know how it turns out for you

Sorry I missed the yogurt part!

Yes, as penelope pointed out, you can make yogurt with whipping cream. And you can even whip it once it's cold.

The important thing is finding yogurt with with two live active cultures. They "eat" the lactose and you end up with yogurt that is lower in carbs, around half of what the carb count is. So, if your store bought yogurt - use only high fat yogurt - is 8 grams of carbs per serving, it's really around 4.

Re: Soup...Chilled soups! Puree cooked vegetables, chicken or avocado with cold chicken stock, strain through a seive and season!

...what's '10'?

...what's 'non-instant' skim milk powder? I didn't know there was more than one kind.

Non instant skim milk powder has not been altered to facilitate the mixing with water.

Maybe this is the one you already have.

You have to mix it with water a bit at a time until creamy in consistence.

Looks like a fine powder instead of a fluffy granular.

A rich milk or 10 % cream or cereal cream
