That brand isn't available here but Keto is - they seem to be the same thing with 10-11 g carbs per 1/2 cup serving. And needing to let it sit at room temperature for about 15 minutes to be spoonable.

What's with the weird texture? Husband calls it dry, I say it's like ice milk. Does the lack of sugar really affect the texture that much? Or is it something else?

Tho since I can't have real ice cream & this isn't too many carbs or protein for me & I do like the taste - I'm not going to complain too much. The store carries only 3 flavors & I only like 2 of them - coffee & chocolate chip mint.

PS - I finally thought to look it up. It's the eryththritol that causes the ice cream to be so solidly frozen & gives it the weird texture. Guess I can live with it.

I think that the Rebel ice cream has a strange consistency. As someone else said, it's mouth feel is too dry.

I prefer the Enlightened keto ice cream. It's consistency is creamier. I've tried the peanut butter chocolate, butter pecan, and red velvet cake. All are good, but my favorite is the butter pecan. Also, for any of the sugarfree ice creams, I think that a flavor that has chunks of something (e.g., pecans) keeps it from freezing into such a solid brick.

Note that Enlightened also has a low calorie ice cream made with low fat milk. The keto version says "1G" on the outside of the pint in big letters, indicating 1 g of net carbs per 1/2 cup serving.

A new lc ice cream just came to our grocery - Killer Creamery. Haven't had a chance to try it yet, but it's going to be on sale all month. I'm looking forward to trying the chocolate chip mint - one of my favorites.

Rebel is a bit dry, but it's 5 or 6 carbs for the entire pint or about 1.5 carbs per serving.

Taking it out and letting it soften for 10 minutes helps, so does taking it out and putting it in the fridge for longer. But I'm not often that patient.

I've tried Rebel a few times. I've set it on the counter but even after 30-45 minutes it's still so hard I can't even scoop it without bending my spoon and hurting my hand! And who wants to wait for an hour to have some? So I pop mine in the microwave for 20-30 seconds. Comes out nice and creamy with a great texture.

The first low carb ice cream I ever had was also low fat. It was weird. But I found out that adding cream to it improved it immensely. I wonder if adding cream to any of the new generation of low carb ice creams would help.

Found Enlightened at WM yesterday. Bought pkg of 4 bars, just about 25 cents more than the pint size. Figured bars a better strategy as I always eat a whole pint.

The carmel swirl was yummy. Fairly creamy, a bit airy like cheap icecreams not the dense ness of a Ben &Jerrys .

Will definitely buy again. Satisfying.

My big sister says any container of ice cream is a single serving

I don't think we should compare keto foods to the non-keto foods they represent.

Keto ice cream isn't as good as regular ice cream, keto bread isn't as good as regular bread, keto macaroni isn't as good as regular macaroni, keto cookies aren't as good as regular cookies. We just have to accept them for what they are and either like them on their own terms or not.

On the other hand vegan burgers aren't as good as regular burgers, vegan sausage isn't as good as regular sausage, and so forth.

When we adopt a WOE we simply have to find what we like and what we don't like in that WOE. Forget about ultra creamy ice cream loaded with insulin spiking cane sugar or high fructose corn poison. Either you like keto ice cream or you don't. Period.

I eat keto ice cream, keto bread, and other low carb-high fat foods that taste different from their traditional counterparts.

But I also get to eat bacon (m-m-m-m-m-m-m-m-m!), butter, and heavy whipping cream in my coffee.

Some things about keto are better!

Totally agree with you, Bob. Mac n cheese, family recipe, was YUM, but stopped making it after reading DANDR, 20 years ago.

The Enlighted icecream was good enough that I will buy it again, it was that good. It truely filled a void that only high end ice creans fill.

Grandma's mac & cheese was wonderful - just mac & cheese, no sauce, put under the broiler to crisp up the cheese. My sub for it is cheese melted in a non-stick pan until it's just right. I no longer miss the macaroni.

I know my regular grocery doesn't carry Enlightened (yet), but need to check out WalMart & see if they have it. Sounds good!

I, too, agree with Bob - most subs don't compare to the real thing. But since the real thing spikes my bg, it's the sub or nothing. Usually nothing as so many lc versions are very worky.

I just had my first serving of Killer Creamery No Judge Mint (chocolate chip mint). It is WONDERFUL! It tastes & has a mouth feel like real ice cream. Tho out of caution I set it out for 15 minutes before digging in.

I got this flavor because I know I like it (usually), but now will have to try the other flavors. They don't have coffee flavor tho - hope they add it to the line-up.

Enlightened was on sale for ckearance at MW. Bet that line will be eliminated. Bought 5 boxes.... 25%off.

Bummed it might be no longer stocked.
